Maple Almond Vanilla Energy Bites

Ingredients

  • 1 cup Oatmeal I used instant oats for this recipe, but steel cut or old fashioned oats can be used
  • ½ cup RX Maple Almond Nut Butter
  • cup Maple Syrup Honey or REAL Maple Syrup is recommended
  • ½ cup Dried cherries
  • ¼ cup Almonds
  • ¼ teaspoon Ground cinnamon
  • ½ teaspoon Vanilla extract

Instructions

  1. Add all ingredients to the bowl of the food processor fitted with the metal blade

  2. Pulse until all ingredients are chopped and thoroughly mixed, the mixture should be sticky

  3. Add more oats if it's too sticky to handle, or more fruit or syrup if it's too dry

  4. Refrigerate the mixture for 30 minutes

  5. Scoop a small amount of the dough using a cookie scoop or spoon and roll into a ball

  6. Store in the refrigerator or freezer
