Easy No Bake Maple Almond Vanilla Energy Bites
Making good snack choices just got a whole lot easier. Whip up a batch of my Maple Almond Vanilla energy bites and be ready for the next snack attack.
I started with a jar of RX Maple Almond Butter that I picked up at Walmart.

RX Nut Butter is a nutritious and delicious spread made from real ingredients like egg whites, nuts, and dates that provides nutrition and is available in a variety of great-tasting flavors.
You can get peanut butter, but you can also get Chocolate peanut butter or Cinnamon peanut butter. Then there’s almond butter or Maple almond butter or Vanilla almond butter.
Available in both single-serve packs and full-sized jars, it’s the spreadable snack that tastes good and is good for you.
The rest of the recipe requires pantry staples like oatmeal, maple syrup, nuts, and dried fruit.
Energy bites are so easy to make
Whip up a batch in your food processor and about an hour later you have a delicious, nutritious snack. Use your food processor’s metal blade and pulse until all ingredients are thoroughly mixed. The dough should be sticky.
Transfer to a mixing bowl and put it in the fridge for about 30 minutes.
When the dough is chilled scoop small amounts (about a tablespoon) with a cookie scoop or a spoon and roll into a ball.
Finished energy bites should be stored in the refrigerator and will keep for about 2 weeks. Yeah, like they’ll last that long.
They can also be stored in the freezer.
Maple Almond Vanilla Energy Bites
Easy no-bake energy bites
Ingredients
- 1 cup Oatmeal I used instant oats for this recipe, but steel cut or old fashioned oats can be used
- ½ cup RX Maple Almond Nut Butter
- ⅓ cup Maple Syrup Honey or REAL Maple Syrup is recommended
- ½ cup Dried cherries
- ¼ cup Almonds
- ¼ teaspoon Ground cinnamon
- ½ teaspoon Vanilla extract
Instructions

Add all ingredients to the bowl of the food processor fitted with the metal blade

Pulse until all ingredients are chopped and thoroughly mixed, the mixture should be sticky

Add more oats if it's too sticky to handle, or more fruit or syrup if it's too dry

Refrigerate the mixture for 30 minutes

Scoop a small amount of the dough using a cookie scoop or spoon and roll into a ball

Store in the refrigerator or freezer
They are so easy to customize
The basic recipe can be modified to include your favorite foods or to meet certain dietary requirements. Instead of dried cherries use dried blueberries, cranberries, or dates. I used Quaker 1-Minute Oats, but you can substitute Bob’s Red Mill Gluten-Free Rolled Oats if you prefer a GF option.
Add cocoa powder or chocolate chips if All Things Chocolate is your idea of an afternoon snack. I get it, really.
