An Abundance of Cherry Tomatoes
This recipe for roasted cherry tomatoes has been made, in my kitchen, using cherry tomatoes, grape tomatoes, beautiful heirloom tomatoes in shades of red, orange, and gold that I paid a fortune for. And it’s been made from cherry tomatoes I find in the ugly fruit bin in Kroger where I usually get a 3lb bag for .99¢.
The recipe can cost as little or as much as you are willing to pay for the tomatoes. The other ingredients are common pantry staples.
Cherry tomatoes are a favorite of mine. I remember the summer garden when I was a child. When tomatoes were coming in there was the frantic activity of canning whole tomatoes, making sauce or juice. The vegetable crisper would be chock-full of cherry tomatoes and we would eat them like candy.
As kids, my siblings and I played a game to see how many cherry tomatoes we could stuff in our mouth at one time. (I don’t do that anymore). I still love it when tomatoes are in season.

Check Your Pantry
If a glut of cherry tomatoes is your main worry right now let me share my recipe for roasting cherry tomatoes.
It’s easy, you’ll probably have the other ingredients in the pantry. For roasted cherry tomatoes, you will need garlic, olive oil, balsamic vinegar, brown sugar, salt, and thyme.
You’ll use up a couple of pounds of tomatoes, eat it all, and then make it again. It’s that good. These roasted tomatoes are bursting with flavor, garlicky and intensely sweet.
Perfect for the harvest that’s coming in but works just as well for the lackluster varieties you get from the grocery store or when they are not in season.
In Season, Easy on the Budget
This week I bought a 3-lb bag (from the ugly fruit bin for .99¢) at Kroger. This bag was a combination of grape and cherry tomatoes. There were a few smushy ones that I fed to the chickens, otherwise, it was a big bag of tomato goodness.
I had cottage cheese in the fridge. I love the tomatoes with cottage cheese, but you can substitute ricotta cheese. In the freezer, I had 2 packages of Dave’s Bread Killer Classic English muffins that I got for FREE with a Kroger BOGO and an Ibotta rebate.
That’s how I roll.
So this time when I made Roasted Cherry Tomatoes with cottage cheese on English muffins I paid about $1.50 including pantry items. Hey, this recipe is worth it at full price!
Roasted cherry tomatoes
Roasted cherry tomatoes in balsamic vinegar, garlic, olive oil.
Ingredients
- 2 lb cherry tomatoes (about 40)
- 3 cloves garlic chopped or minced
Marinade
- 1/2 cup Olive oil
- 2 Tbsp Balsamic vinegar
- 2 tsp brown sugar
- 1 tsp thyme
- 1/2 tsp salt
Instructions

Rinse the tomatoes and pat dry

Chop or mince the garlic cloves

Place tomatoes and garlic in a shallow baking pan

Whisk together the marinade ingredients and pour over tomatoes and garlic

Bake in a 325° oven for 45 minutes or until tomatoes have shriveled.
Healthy Snacking
This time of year when tomatoes are at their best is the perfect time to add them to your diet. As often as you can. They taste better now and the bonus is the incredible health benefits. Low in calories, high in fiber, potassium, and antioxidants.
Pair it with cottage cheese, which is an inexpensive source of low-calorie protein among many other nutritional benefits, and put it on whole-grain crostini for a snack or appetizer. If you prefer, you can use ricotta cheese in place of cottage cheese.
For a satisfying breakfast use toasted English muffin or your favorite GF bread.
An Abundance of Tomatoes
When your garden is in full swing and produce is ripening at a rate faster than you can blanch and freeze, or can, or pickle then you need more ideas on how to eat it.
Cherry tomatoes can be chopped and tossed into scrambled eggs or frittata, pasta salad, or include them when making shish kebabs.
Keep a bowl of roasted cherry tomatoes in the fridge for breakfast or, if a party happens to break out, for an appetizer. You’ll be ready.
