Roasted cherry tomatoes

Roasted cherry tomatoes in balsamic vinegar, garlic, olive oil.

Ingredients

  • 2 lb cherry tomatoes (about 40)
  • 3 cloves garlic chopped or minced

Marinade

  • 1/2 cup Olive oil
  • 2 Tbsp Balsamic vinegar
  • 2 tsp brown sugar
  • 1 tsp thyme
  • 1/2 tsp salt

Instructions

  1. Rinse the tomatoes and pat dry

  2. Chop or mince the garlic cloves

  3. Place tomatoes and garlic in a shallow baking pan

  4. Whisk together the marinade ingredients and pour over tomatoes and garlic

  5. Bake in a 325° oven for 45 minutes or until tomatoes have shriveled.
