Corned beef and cabbage is a classic St. Patrick’s Day dish. It’s a hearty, warm dish that’s perfect for a chilly mid-March day. The ingredients are readily available and on sale in most grocery stores.

If you want an unforgettable variation of this dish, try my Reuben Pizza! In all honesty, this is one of only a few St. Patrick’s Day recipes I have.

I love our traditional dishes, but this Reuben Pizza is like taking a delicious detour that somehow still feels totally Irish. It’s like our old favorites met a pizza oven, and the result is mind-blowingly good. So, for a St. Paddy’s Day get-together, ditch the expected and dive into this Reuben Pizza goodness instead!

Reuben pizza calls for a thick crust

There is nothing lightweight about this pizza.  I use a whole 14-ounce can of thoroughly drained, almost dry, Silver Floss Sauerkraut and 1/2 lb of corned beef, cut into ribbons.  You can scale it back if you want, but the appeal of this pizza is its heartiness.

Drain a 14 oz. can of sauerkraut, and squeeze it until it’s almost dry.

Cut 1/3-1/2 lbs of corned beef into ribbons.

Corned beef and kraut is a taste sensation and you should get a whole mouth full of it in every bite.  This would really put a thin crust to the test.

This Reuben Pizza really needs a thick crust.

When I have the time I will make my own crust, let the Bread Maker do the heavy lifting, and it only takes an hour or so.  Otherwise, ready-made crust (Boboli is a favorite) will do just fine.

Assemble the pizza and don’t forget the special sauce

Drizzle a little olive oil over the crust, add pizza sauce, drained sauerkraut, and corned beef, and top with mozzarella cheese.  Bake in a preheated (425°) oven for about 10-12 minutes.

This is a tasty pizza, but the added super-zip is Thousand Island Dressing combined with Matouk’s West Indian Hot Sauce.  Start with a 3:1 ratio, add more Matouk’s if you like things spicier.  Matouk’s is a salsa made with papayas and the fires of hell, also called scotch bonnet peppers, so go easy.  It goes without saying, so I’ll say it anyway; if you dislike spicy stuff, stay away from the Matouk’s.  The Thousand Island Dressing will do just fine.

A new St. Patrick’s Day family tradition

Celebrating St. Patrick’s Day in Savannah, GA for many, many years was a blast. We lived a block away from the parade route and were in the staging area. Bands started lining up, and Shriners started driving around in their tricked-out carts by 7 am. Morning coffee was usually spiked with Bailey’s Irish Creme.

Moving to the country doesn’t mean we don’t celebrate it anymore.  Now we celebrate it differently.
