
Use 2 3/4 cups of the basic muffin mix as the basis for any muffin you choose to make
Mix all ingredients and store in an airtight container in a cool dry place.
Add up to 1 cup of your choice of fruits or nuts to the batter
Fill paper-lined muffin cups 3/4 full
Bake at 400° for 18-20 minutes until a toothpick comes out clean
Cool for 5 minutes, then remove to a wire rack
For lemon poppy seed muffins, add 1/4 c lemon juice, 1 t of lemon zest and 2 T poppy seeds.
For Pumpkin Pie Spice muffins, add 1 tspĀ Pumpkin Pie Spice blend and 1/2 cup pumpkin puree.
