lemon poppyseed muffins

Basic Muffin Mix

Use 2 3/4 cups of the basic muffin mix as the basis for any muffin you choose to make

Ingredients

  • 8 cups all-purpose flour
  • 3 cups sugar
  • 3 tbsp baking powder
  • 2 tsp salt
  • 2 tsp ground cinnamon
  • 2 tsp ground nutmeg

Instructions

  1. Mix all ingredients and store in an airtight container in a cool dry place.

When making a batch of muffins use 2-3/4 cup of muffin mix, 1 egg, 1 cup milk and 1/2 cup melted butter.

  1. Add up to 1 cup of your choice of fruits or nuts to the batter

  2. Fill paper-lined muffin cups 3/4 full

  3. Bake at 400° for 18-20 minutes until a toothpick comes out clean

  4. Cool for 5 minutes, then remove to a wire rack

Recipe Notes

For lemon poppy seed muffins, add 1/4 c lemon juice, 1 t of lemon zest and 2 T poppy seeds.

For Pumpkin Pie Spice muffins, add 1 tspĀ Pumpkin Pie Spice blend and 1/2 cup pumpkin puree.
